Customer Experience at a Dietetic Student Operated Restaurant

            At Brigham Young University dietetic students have opened a restaurant, owned and operated fully by dietetic students. The purpose is to provide a laboratory learning experience for the students by operating a real restaurant for real customers, while providing healthy food options. Most customers were 18 to 25 years old and undergraduate students (Stokes, Patten, & Weight, 2017).
            Among the reasons cited by customers which encouraged them to dine at the student operated restaurant were quality of food (92.6%) and nutritional quality of items (85.8%) (Stokes, Patten, & Weight, 2017). Among customers highest needs for choosing a where to dine were healthy options and speed of service, both being the focus of the dietetic students (Stokes, Patten, & Weight, 2017).
            A college dining operation run by dietetic students is an interesting idea that should be implemented in more colleges. It provides real world learning experiences to dietetic students in menu planning, food service operation, customer service, business operations, and marketing. It also provides healthy dining options to students on campus and encourages other students to learn more about dietetics.
