Tiny Greens - Big Benefits
Just half a cup of Brussel sprouts provide:
~30 calories
109 micrograms of vitamin K: essential for blood clotting and bone health
48 milligrams of vitamin C: boosts the immune system, antioxidant, increase iron absorption
47 micrograms of folate: important for cell division, red blood cell production, and heart health
30 micrograms of vitamin A: vision, supports the immune system, skin health
They boost health, support cardiovascular health, and lower inflammation- perfect for the holiday season. I added pomegranate seeds for a more refreshing bite which added an additional antioxidant that supports heart health, digestion, and brain function.
Shaved Brussel Sprout Salad:
Salad:
1lb Brussel sprouts- ends trimmed
1 large Honeycrisp apple- chopped
1/2 cup dried cranberries
1/2 cup sunflower seeds- I swapped this for the pomegranate seeds
1/3 cup shaved parmesan
Salt and pepper to taste
Dressing:
1/3 cup olive oil
1 tablespoon lemon juice
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
2 teaspoons Dijon mustard
1 clove of garlic- minced
Salt and pepper to taste
1. Make the dressing in a small bowl or jar by combining olive oil, lemon juice, apple cider vinegar, maple syrup, Dijon, garlic, salt, and pepper.
2. Shave the Brussel sprouts by slicing with a food processor, mandoline, or sharp knife.
3. Place shredded Brussel sprouts in a large bowl, add chopped apple, dried cranberries, sunflower seeds (or pomegranate seeds), and parmesan cheese.
4. Drizzle the dressing on top, season with salt and pepper, and toss
