I am
super excited to share this awesome recipe with all of you! Not only is this a
tasty treat, but it can also be used for educational sessions and as a fun
little game to interact with your audience or peers. This mousse has a secret
ingredient which is…... (drumroll please) TOFU! This recipe tastes so good and
it is made with tofu which is one of the very few plant-based options that is a
complete protein. This recipe is gluten free and also vegetarian/vegan as long as the brand of dark chocolate does not contain milk derived products such as whey, casein, milk, milk fat, and milk solids. It is definitely a go to for nutrition education!
It is so
fun to tell your audience that this mousse has a secret ingredient and see if
they can guess that it is actually tofu! Tofu is such a versatile ingredient because it takes on the flavors that it is combined with! If you decide to try this with an audience, make sure you ask about allergens

Chocolate Tofu Mousse
Ingredients
1 package Organic Silken Tofu
2 cups of dark chocolate chips
2 tsp vanilla extract
2 tbsp pure maple sugar (or substitute 3 tbsp sugar)
Optional
A handful of raspberries or strawberries to top off the
mousse
Instructions
1.
Open the tofu package and put the tofu into a
blender or food processor and blend until completely smooth (~1 minute).
2.
Blend in the vanilla extract and pure maple
syrup/sugar.
3.
Melt the chocolate chips in the microwave on the
defrost setting for ~3 minutes. Stop half-way through to stir the chocolate.
4.
Add the melted chocolate to the mixture and
blend until smooth. Refrigerate for at least 4 hours before serving.
5.
Add toppings as desired.
