Cilantro Pistachio Pesto Dip

Ingredients

  • 1/3 cup shelled roasted and salted pistachios
  • 1 bunch cilantro leaves
  • 2 small jalapeƱos
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/2 lime, juices
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp pepper 
  • 1/4 tsp salt 
Directions
  1. Add all ingredients to a food processor or blender.
  2. Pulse until smooth, usually 30-40 seconds.
  3. Remove and store in a container and refrigerate.
  4. Use within 5 days for best quality

Vegetarian Stuffed Cabbage Rolls

Ingredients

  • 1 large green cabbage
  • 2 Tbsp olive oil
  • 1 cup green lentils, cooked
  • 2 cups brown rice, cooked
  • 1 small onion, minced
  • 1/2 cup dried apricots, chopped
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 tsp paprika
  • 1 Tbsp low sodium soy sauce
  • 2 Tbsp tomato paste
  • 1 25 oz jar tomato sauce
  • Red pepper flakes for taste
  • Salt and pepper for taste
Directions
  1. Bring a large stock pot of water to boil. Place whole cabbage in pot and boil until tender and easily peel off, about 5-7 minutes. Turn off heat and carefully remove the cabbage and place on a cutting board. Pull the leaves apart (keeping them whole) and place on a paper towel line surface.
  2. While cabbage is boiling, heat one tbsp olive oil on medium-high heat and saute onions until translucent. Add garlic and dried herbs, spices to pan. Heat an additional minute. Remove from heat and transfer to a large mixing bowl. Wipe out pan.
  3. Stir in lentils, rice, and dried fruit to the onion mixture. Add one tbsp of tomato paste and soy sauce. Set aside.
  4. To make the rolls, place 1-2 tbsps of mixture onto end of a cabbage leaf, tuck in the sides and gently roll, like a burrito.
  5. In the same pan that made the onion mixture, heat the remaining olive oil on medium heat. Add the red pepper flakes, tomato sauce, and tomato paste. Stir to combine and bring to a simmer, about 10 minutes.
  6. Place the rolls with the seam side down on top of the sauce. Let simmer and spoon sauce on top to moisten, about 5-10 minutes.
Shamrock Shake

Ingredients 
  • 1 1/2 cups unsweetened coconut milk
  • 1/2 cup avocado
  • 4 Tbsp agave nectar
  • 1 tsp matcha powder
  • 1/2 tsp pure peppermint extract
  • 6 oz greek vanilla yogurt
  • 1 cup ice
Directions
  1. Scoop yogurt into a mini muffin tray and freeze for 1-2 hours.
  2. Combine frozen yogurt with remaining ingredients in a high-powered blender and puree until mixture is smooth and completely blended.
