Pumpkin Season

If you are like me than this time of the year is AWESOME because there is pumpkin spice EVERYTHING! From cheerios to coffee to pie. I love it all and am so sad when the season for it ends. Although I love the pumpkin due to the yummy taste, there are also many health benefits to eating pumpkin. First of all, pumpkin is packed with vitamin C, vitamin E, antioxidants and beta-carotene. All important parts of a healthy diet! These will help with things such as immune strength, eye health, and skin health. On top of that pumpkin is packed with fiber. Fiber helps to slow digestion and keep you full longer. Fiber also prevents spikes in blood sugars which is very beneficial especially for those who have diabetes. Below is a wonderful recipe to try that will be packed with all of the great health benefits stated above. 
 
Easy and Healthy Flourless Pumpkin Bread
Ingredients: 
-2 cups of old-fashioned oats 
-1 (15 oz) can pure pumpkin
-1/2 cup maple syrup
-2 large eggs
-1 t baking soda
-1 t pumpkin pie spice
Instructions:
-Preheat oven to 350 degrees F. Lightly grease 9x5 in loaf pan with non-stick cooking spray.
-Add all ingredients to a blender and blend until smooth. Pour batter into pan. 
-Bake for 30 minutes or until inserted toothpick comes out clean.
-Let loaf completely cool. Store in airtight container in refrigerator.
