Cinnamon Roasted Chickpeas… A Healthy High Protein Snack!




Have you ever tried oven-roasted chickpeas? If not, why not?! Chickpeas are nutrient-packed and a good source of protein, carbohydrates, and fiber. In addition, they may play a role in combating chronic conditions like diabetes, high cholesterol, and cancer.

I’ve been making roasted chickpeas as a snack for years, so I thought I’d share the recipe with you all J


Cinnamon Roasted Chickpeas


Ingredients:
-       1 can of chickpeas (garbanzo beans)
-       1 tbsp olive oil
-       1-2 tbsp cinnamon
-       2 tbsp brown sugar


Directions:

-       Preheat oven to 400 degrees F and line a baking sheet with parchment paper or tin foil.
-       Drain and rinse the chickpeas. Pat them dry with a paper towel to remove as much moisture as possible.
-       Put the chickpeas on the baking sheet and bake for 15 minutes. Meanwhile, mix the brown sugar and cinnamon in a bowl.
-       After 15 minutes, remove the chickpeas from the oven and drizzle the olive oil over them. Using a spatula, mix the chickpeas around to coat them. Next, pour the cinnamon sugar on the chickpeas and continue to roll them around to cover them completely.
-       Place the chickpeas back in the oven and bake for another 15 minutes.
