Superfood Muffins



These delicious muffins are great for satisfying your sweet tooth while providing health benefits from their micronutrients and antioxidants. Blueberries and bananas have many vitamins and minerals including folate, vitamin A, manganese, potassium, vitamin B6, vitamin C, riboflavin, niacin, magnesium, and iron. These muffins are a great way to get a serving of fruit too. Chia seeds are a great source of antioxidants, fiber, omega-3 fatty acids, calcium, manganese, magnesium, phosphorus, niacin, zinc, potassium, thiamin, and vitamin B2. Oats also have some mighty health benefits to them. They may help control blood sugar levels, lower cholesterol levels, increase fullness, and improve digestion. Oats are also full of fiber and other vitamins and minerals to keep you healthy. The ingredients in these muffins are not just empty calories, they are full of nutrients that your body needs to function properly!

Makes: 12 muffins
Prep Time: 10 minutes
Bake Time: 15 minutes
Total Time: 25 minutes

Ingredients:

·      2 medium rips bananas
·      1 cup blueberries (fresh or frozen)
·      2 eggs
·      2 cups old fashioned oats
·      1 tsp baking soda
·      1 tsp vanilla
·      1 cup maple syrup (may also use 1 cup brown sugar)
·      1 Tbsp chia seeds

Instructions:
·      Preheat oven to 425 degrees Fahrenheit
·      Spray muffin tin with pam spray or line with muffin wraps
·      Mash bananas in medium sized mixing bowl with fork
·      Beat in egg
·      Mix in oats, baking soda, vanilla, maple syrup, and chia seeds
·      Gently fold in blueberries
·      Divide mixture evenly between 12 muffins
·      Bake for 15 minutes
·      ENJOY!

Notes:
·      Add peanut butter or your favorite nut butter on top for additional flavor
·      You may also add chocolate chips, nuts, flax seeds, etc. Or replace blueberries & chia seeds with them
