A Recipe That Scores Every time: Sweet Potato Nachos
You wake up on a Sunday morning in October where the leaves are falling and the air is crisp. What can be better than that? I know. A football Sunday. Growing up my family would wake up on Sundays filled with excitement to watch the Pittsburgh Steelers play. The fun part was not watching the Steelers win and being around friends and family. It was being able to eat all of the yummy food my mom and I made.
Now how rude would I be if I did not share one of my favorite, healthy football snacks that does not make me feel guilty eating. Sweet Potato Nachos! Not only are sweet potatoes perfect for the October weather but, they also are filled with fiber and many vitamins! The best part of this recipe is that you can put whatever toppings you want on it and make it personal! Here is my favorite way to make them for your next football Sunday with your friends, family or even just yourself! Feel free to play around with it, add, swap, or skip ingredients to fit your taste. That is what makes cooking so unique and special to others, it’s all about what feels right to you. I hope you enjoy them as much as I do!
Ingredients:
3 Sweet Potatoes (depends on size)
A pound of Ground Beef
About 2 Tbsp Garlic Powder
About 1 Tbsp Black Pepper
About 1 Tbsp Salt
About 2 Tbsp Paprika
Olive Oil Spray
A packet of Taco Seasoning
About 3 Tbsp of Olive Oil
A Head of Romaine Lettuce
2 Cups of Tomatoes
Sprinkle of Cheddar Cheese
About a ½ cup of Chopped Onions (Red or Yellow)
About 1 Tbsp of Sour Cream
A Drizzle of Hot Sauce
Other Ingredients you can do:
Ground Chicken
Ground Turkey
Jalapeños
Beans
Rice
Peppers
Corn
Peppers
Avocados
Recipe:
- Preheat your oven to 400 degrees F. While your oven is heating up, wash your sweet potatoes to start prepping them.
- You can cut up your sweet potatoes as thin or thick as you want. You do not need to peel them either.
- The thicker they are the longer they will need in the oven
- The thinner they are the less they will need in the oven
- Try your best to keep the same consistency with the cuts of the sweet potatoes to ensure even cooking.
- When you have your sweet potatoes cut up, grab a baking sheet and line your baking sheet with aluminum foil or spray with oil.
- Line your sweet potatoes on the baking sheet and season them with olive oil, salt, pepper, garlic powder and paprika.
- When the oven is preheated and your sweet potatoes are seasoned, put them in the oven for about 10-25 mins depending on how thin or thick you cut your sweet potatoes (10 mins for thin and 25 mins for thicker)
- Always check your sweet potatoes throughout cooking to ensure that they are not burning.
- While your sweet potatoes are cooking, it's time to cook the ground beef or whatever protein you want.
- Put the ground beef in a skillet on the stove on low-medium heat for about 10 minutes or until you no longer see pink. Make sure to rinse the grease off of your ground beef after it is cooked. Once the meat is cooked, add taco seasoning to the pan, mix and put the meat on low heat until you are ready to assemble.
- While your sweet potatoes and protein are cooking, it's time to start prepping your choice of toppings and putting them to the side after they are cut and washed.
- After you sweet potatoes and protein are done cooking, it's time to assemble!
- Start with your sweet potatoes at the bottom and start layering how you want and Enjoy!
