Happy Fall!

Happy Fall Y’all!

Fall is my favorite time of year here in Ohio. Not only is the weather extremely comfortable, but the fall colors outside are absolutely stunning! There is also a lot to do around the area, such as going to the different pumpkin patches, apple picking, visiting different markets, and so on. One of my favorite places to visit during the fall season is White House Fruit Farm in Canfield, Ohio! Not only do they have such great fall produce to purchase and the BEST homemade donuts, but there is always so much going on during the fall weekends!

I always prefer comfort foods during this time of year, including warm, colorful dishes and homemade soups. Some of my favorite seasonal produce options include pumpkins, beets, pears, squash, cranberries, sweet potatoes, and kale. These foods are delicious, especially when they are in season during the fall, and they are packed with nutrients and easy to incorporate into healthy fall dishes!

This is one of my favorite fall recipes that I found last year, and I will definitely be making it a few times this year! It is super easy and quick to make and will fill your mouth will so many fall flavors!

This recipe includes kale, sweet potatoes, and cranberries, along with some protein options and such great herbs and seasonings to help bring out the fall flavors. Some of the benefits of these ingredients include:

Kale – a delicious leafy green vegetable that is packed with nutrients including vitamins A, C, and K along with manganese. It is also very low in calories. Fun fact: I have heard from multiple sources that kale can survive through a snowstorm, if you grow it in your garden, and you can just dig it right out of the snow!

Sweet potatoes - I love to eat sweet potatoes all year round, but especially during the fall because I find that they are much more flavorful! Sweet potatoes are so versatile and can be incorporated into any meal, including breakfast! Sweet potatoes are also packed with nutrients including fiber, vitamin A and C, and potassium.

Cranberries – Fresh cranberries can be eaten raw, but they are often cooked and go really well with different meats and poultry. They are often very tart but have a very fresh flavor! Cranberries are full of antioxidants and may help protect people from urinary tract infections by preventing bacteria from building up in the bladder wall.

There are so many other fall produce options to try and that provide so many health benefits! These are just a few that I love and that are included in the recipe above. Make sure to get out to the fall markets this season and grab some of these colorful fall foods!
