3-Ingredient Banana Oatmeal Breakfast Cookies
We all know that breakfast is “the most important meal of the day”, but sometimes I get tired of having the same thing over and over. These breakfast cookies are super quick, easy, and delicious. The best part is they can be made in the morning or the night before and taken with you on the go.
The 3 base ingredients are oats, bananas, and chocolate chips. They’re gluten free & vegan. From there you can add anything you’d like!
Ingredients:
- 1.5 cups oatmeal
- 2 medium bananas (the riper the better)
- 1/3 cup mini chocolate chips
Instructions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Line a rimmed baking sheet with a silpat mat or coat with cooking spray.
3. Using the back of a fork, mash bananas in a medium bowl until they are broken down. Add in oats and gently stir until the oats and bananas are mixed together and look like a thick cookie batter.
4. Now you are ready to add the chocolate chips! Sprinkle them into the dough and stir until they are just mixed throughout.
5. Scoop one heaping tablespoon of the dough into your hands and free form into a cookie*. Place on cookie sheet and continue until you have 12 cookies.
6. Cook for 12-15 minutes or until set through and lightly golden. Cool and enjoy!
*These cookies don’t spread while baking, so form them into a cookie shape when dropping them onto the cookie sheet.
Tips For Banana Oatmeal Breakfast Cookies:
· Use ripe bananas. The riper the better. You are looking for brown-speckled bananas similar to what you’d use in a banana bread. These will be sweeter and easier to mask.
· Try blending your oats. If you want a smoother consistency, I like to pulse my oats in the blender until it looks almost like flour.
· Try your favorite mix ins. ¼ cup of sliced almonds, walnuts, or dried fruit are great options. I also love to add a dash of vanilla extract, cinnamon, or some pumpkin puree.
