Ballroom Bites

 



My all-time favorite memories from college happen to occur every Tuesday at 8 pm.

Let me set the scene for you. It is a cold fall evening, the leaves have fallen,

and darkness covers the sky by 6 pm. Imagine the couch overflowing with fluffy blankets and pillows.

There are candles scattered around the room, filling the air with sweet scents of fall.

You see a group of college students running from the kitchen to the living room carrying endless plates,

bowls, cups, and platters filled with food.

You can smell a sweet and savory aroma drift from the kitchen, traveling through the house.

Laughter and giggling, full of anticipation, echo off the walls.

The atmosphere is the personified version of coziness.

You may be asking yourself what causes this chaos every Tuesday night at 8 ?

Dancing with the Stars.

Each week, the Dancing with the Stars cast competes in the ballroom for the mirror ball trophy.

They showcase both Latin and traditional styles of ballroom dance, ranging from the

Viennese waltz and the foxtrot to the cha-cha-cha and the salsa. 

We huddle up on the couch, decked in our fall pajamas, waiting for the show to turn on.

And of course, what is a show without a snack?

I compiled a list of recipes worthy of the mirror ball. 


Tango Mango Salsa Recipe: 

Ingredients:

-1 mango 

-¼ red onion 

-¼ cilantro 

-¼ jalapeno (optional) 

-1 tsp of honey 

-the juice of ½  of a lime 


Instructions:

Chop the mango, red onion, cilantro, and jalapeno and mix together in a bowl.

Add the lime juice and honey and mix until combined. Serve with tortilla chips for a yummy snack!


Quick Step Quiona Cluster Recipe 


Ingredients:

2 cups Puffed Quinoa 

7 oz  Chocolate (milk or dark chocolate) 

1 tsp Flakey sea salt (optional) 


Instructions:

Place the puffed quinoa in a frying pan and toast on medium heat until golden brown. It should have a crunchy texture and be set aside for later. Put the chocolate in a microwave-safe bowl and heat it in the microwave in 30-second increments, stirring each time until melted. In the mixing bowl, add the quinoa puffs and stir until the quinoa is covered. On a pan lined with parchment paper, plop a tablespoon-sized amount onto the parchment paper and sprinkle with sea salt. Set aside and let cool for about 30 minutes or until hardened. Enjoy!



Baked Potato and Jive Recipe 


Ingredients 

1 Russet Potato 

1 tsp of Butter or Olive Oil 

1 tbsp  Sour Cream or non-fat plain Greek yogurt

1 Tbsp of freshly chopped chives ‘’

1 sprinkle of salt 


Optional 

-1 tbsp of shredded cheddar or white cheddar cheese 

-1 Piece of crumbled bacon 

-1 tsp of butter 

-salt to taste 

-pepper to taste 


Instructions: 

Preheat the oven to 400 degrees F. Wash and dry the potato, poke holes in it with s fork,

and rub the skin with either olive oil or butter with a sprinkle of salt.

Wrap in tin foil and place directly on the oven rack for an hour or until it is soft.

In a separate bowl, mix in the sour cream, chives, salt, and pepper, as well as any additional toppings.

Cut the potato in half and fluff the inside with a fork. Add the mixture to the top and enjoy!



Paso Doble Pumpkin Dip 


Ingredients:

4 ounces cream cheese, room temperature

1 cup pumpkin pie puree

1 cup powdered sugar

¼  teaspoon ground cinnamon

1/8 teaspoon ground cloves


Instructions: 

In a mixing bowl, add cream cheese and beat until smooth.

Next, slowly add the pumpkin pie puree and mix until the mixture is smooth.

Add the powdered sugar, cinnamon, and clove, and mix until they appear to be combined and smooth.

Serve with vanilla wafers, graham crackers, apples, pretzels, etc. 



Cha-Cha Chimi Churri 


Ingredients:

1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems

3 to 4 garlic cloves

2 tablespoons fresh oregano leaves (can sub 2 teaspoons dried oregano)

1/3 cup extra virgin olive oil

2 tablespoons red or white wine vinegar

1/2 teaspoon sea salt

1/8 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes


Instructions: 

Finely chop the fresh parsley. Oregano, garlic, and place in a bowl.

You can also use a food processor and pulse until finely chopped. Stir in olive oil, vinegar, salt, pepper, and red pepper flakes.

Adjust seasonings to taste. Serve with grilled steak, roasted vegetables, sweet potatoes, or even serve with tortilla chips. Enjoy!
