4 Delicious Avocado Inspired Recipes

 

Avocados are the bright green fruit with a large bit and dark leathery skin. They're also known as alligator pears or butter fruit. Avocados are a favorite in the produce section and they can be used in more recipes than just guacamole and chips. They're turning up in everything from salads, pasta, wraps, smoothies, and even brownies. Avocados are a source of vitamins C,E,K, and B6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. Avocados contain high levels of healthy, beneficial fats, which can help a person feel fuller between meals. If you love avocado's, below are some FUN and different ways to incorporate avocados into a recipe. Enjoy :) 

Avocado Pesto Pasta

Ingredients: 

1 ripe avocado, peeled and pitted 

-       1 cup of greens

-       ¼ pumpkin seeds

-       1/3 cup Walnuts

-       3 Garlic cloves

-       Juice of 1 Lemon 

-       2 tbs of Olive Oil 

-       6 tbs of Water (or more as needed)

-       1 box of Pasta (I use Gluten free noodles)

 

Instructions: 

-       Boil water and add your pasta to the pot

-       While the noodles are boiling, add the avocado, greens, pumpkin seeds, walnuts, garlic, lemon juice, olive oil, and water to a blender

-      Blend until smooth 

-       Add the Avocado Pesto sauce to the cooked pasta

-       Add any cheese or toppings to your pasta dish.

Avocado Egg Rolls

Ingredients:

-       Egg rolls 

-       Avocado oil 

-       3 avocados

-       1/3 Red onion

-       1/3 cucilantro 

-       2 tbs Sun-dried tomatoes in the oil. 

-       Salt 

-       Sweet chili sauce 

 

Instructions 

-       Add the avocados, red onion, cilantro, sun-dried tomatoes, and salt. 

-       MIX all the ingredients 

-       Add oil to a pan and heat the oil to prepare to fry the egg rolls

-       Had a large spoonful to the middle of the egg roll wrap and water the edges 

-       Roll them up and once the oil is hot in the pan fry on each side of the egg roll until browned

-       Once all the egg rolls are cooked, serve with a sweet chili sauce. 

 

Garlic Avocado Tuna Melt 



















Ingredients: 

-       1 avocado 

-       1 tbs butter 

-       2 slices of whole-wheat toast (or gluten free)

-       Sprinkle of Red pepper flakes (more if needed)

-       ½ tsp garlic 

-       1/3 cup Mozzarella cheese 

-       1 tbs Butter 

-       parsley

 

Instructions 

-       In a bowl mash the avocado, add red pepper flakes, salt to taste and minced garlic

-       Butter one side of each of the two pieces of bread 

-       Spread the avocado mix on the other side that doesn’t have butter spread on and add mozzarella cheese.

-       Put the sandwich together 

-       Air dry at 400 degrees F for 4 minutes. 

-    Sprinkle parsley on top

 

Avocado Brownies

Ingredients: 


-       1 ripe avocado 

-       ½ cup cacao powder (or cocoa powder

-       1 cup coconut sugar (or brown sugar)

-       2 eggs

-       ¼ cup almond butter 

-       1 tsp baking powder 

-       1 tsp vanilla extract 

-       ¼ tsp fine sea salt 

-       ½ cup dark chocolate chips (use a dairy-free brand, if needed)

 

 

Instructions: 

1.     Preheat 325 degrees F – line a 9-inch square baking dish with parchment paper 

2.     In a food processor, combine the avocado (peel + pit removed), cacao powder, eggs, coconut sugar, almond butter, baking powder, vanilla, and salt process until smooth

3.     Fold in chocolate chips, then pur batter into the prepared pan (decorate the top with more chocolate chips, if desired)

4.     Bake at 324 degrees F to 40-45 minutes

5.     Allow to cool down to room temperature, cut, and enjoy. 

6.     Can be stored in an airtight container for up to a week.
