With Halloween around the corner and spooky season upon us bundle up, hit the couch, and turn on your favorite scary movie with this delicious and nutritious chili! This recipe has been adapted from my nana's and my mom's own personal recipes and was one of the first meals I learned to make on my own. Chili is a simple and nutrient-loaded meal with good sources of protein, magnesium, fiber, and most importantly FLAVOR. I love that there is no one way or right way to make chili, there are so many recipes and different options out there for all preferences, so have some fun with it! Pair your bowl of chili with side options like cornbread muffins, guacamole, tortilla chips, white rice, noodles, or whatever else sounds good to you!


3-BEAN CHILI

INGREDIENTS


1lb ground meat

2 cans of black beans

2 cans of red kidney beans

1 can mild chili beans

1 can corn

2 cans tomatoes and green chilis

1 can tomato paste

1 cup Beef Bone Broth

1 onion diced

1 bell pepper diced

2 tbsp minced garlic

1 tbsp oil

1-2 tbsp chili powder

1-2 tsp paprika

1 tsp salt

1 tsp pepper

Optional: diced jalapeños


DIRECTIONS


-Simmer chopped onion + bell pepper until soft, add in canned vegetables, and simmer for another 5 minutes. Add in garlic and jalapenos, simmer + lightly season.

-In a separate pan cook ground meat until done, lightly season.

-Add remaining cans of beans and meat to the pot of vegetables, add ¼ cup beef bone broth, add in cooked ground meat, and mix well. Season with remaining chili spices, cover, and let simmer for 20 minutes on medium-low.

  1. Chili is one of my FAVORITE things to eat in the fall!! Definitely gives the warm and cozy vibes. I like that you pointed out all the nutrients that you can pack into a bowl of chili as well! I would love to try this recipe next time I make chili!!
