Black Bean Brownies?!

YES! A nutritional twist to the famous fudge brownies are black beans! This is such a simple and easy recipe. Instead of adding the water, vegetable oil, and eggs to the boxed brownie mix, you simply blend up a can of black beans with coffee and add some cinnamon...BAM! Another healthy tip is to buy dark chocolate brownie mix and also throw in some dark chocolate chips. Eliminating the oil and eggs and replacing it with black beans is great because it adds some protein to the brownies. It also lowers the cholesterol because you are eliminating the eggs and lowers the fat because there is not any oil. The dark chocolate brownie mix is a healthier alternative instead of fudge brown mix as well. The dark chocolate chips give it a little bit more consistency as well as flavor. This is great if you are craving something sweet because not only does it help suppress the craving, but is also adds in protein! 

Having a brownie higher in protein is a great snack to eat but especially after working out. After working out, it is important to eat a food high in carbohydrates but also high in protein.. these black bean brownies have both of those qualities. Eating the brownie within 30 minutes post workout can have you feeling awesome! :) 

Black Bean Brownies
Ingredients:
1 box of dark chocolate brownie mix
1 14.5 oz can of black beans
½ teaspoon cinnamon
½ cup of brewed coffee
1 cup of dark chocolate chips

Directions:
1.           Preheat oven to 350 degrees
2.          Spray a 13 x 9-inch pan with cooking spray
3.           Drain and rinse the black beans in a strainer (save the can)
4.         Put the rinsed black beans back into the can and fill the rest of the can with coffee until it reaches the top
5.           Pour the coffee and beans into blender or food processor and blend so that it is in liquid form
6.          In a large bowl, add the coffee and bean mix to the boxed brownie mix
7.          Add in ½ teaspoon cinnamon
8.          Add 1 cup of dark chocolate chips and stir
9.          Pour the brownie mix into the pan
10.     Bake at 350 degrees for 20-22 minutes

  1. Awesome post IB! I have made a version of these myself but the coffee and cinnamon sounds like a great twist! I will have to try that for next time.
